What if the most wasted part of saffron could become a treasure trove of antioxidants? Dried saffron tepals, often discarded, are proving to be a powerhouse of health-boosting compounds.

Saffron is famous for its delicate threads, but its petals—the tepals—are usually tossed aside. Yet these colorful by-products are packed with polyphenols, natural antioxidants that could fuel new products in pharmaceuticals, cosmetics, and food. The challenge? They spoil quickly, so drying is key to preserving their value.

In a recent study, researchers compared traditional soaking (maceration) with ultrasound-assisted extraction (UAE) using water and different methanol concentrations. They found that dried tepals still hold a decent amount of phenolics and anthocyanins, but their antioxidant activity was actually higher than the spice itself. The FRAP, ABTS, and DPPH tests all confirmed this boost.

Even more intriguing, HPLC-DAD analysis uncovered phenolic compounds like ferulic acid, isoquercitrin, and quercitrin—never before seen in fresh tepals. Vitamin C, already known in saffron spice, also showed up in the dried petals. And here's the kicker: UAE with safer solvents like water or low methanol matched the old method's results but in half the time.

This means saffron waste can be dried without losing quality, and green extraction methods can efficiently pull out valuable antioxidants. It's a win-win for sustainability and science—turning trash into treasure, one petal at a time.
